Sencha Fukamushi is the type of Japanese green tea that has been steamed for a longer period than regular sencha, from 1 to 2 minutes, a process that totally changes both the appearance and the taste profile of the leaves. This deep-steaming softens them and they often break into small bits that leave a deposit in the cup. The good news is that, as with matcha, when you drink Fukamushi you are getting more of the numerous nutrients found in green tea. Our organic Sencha Fukamushi is from Kirishima in the southern Japanese prefecture of Kagoshima. The shiny, thinly cut, dark green leaves have been shaded for five days prior to harvesting. They develop fruity aromas and yield a harmonious, sweet cup with a balanced tartness. Without any of the astringency one would expect from a regular sencha tea, they present underlining floral aromas. The taste is sweet and “grassy” like vegetable broth, with a slight seafood aftertaste.
