Very popular and recognizable due to the blue colour of its liqueur, blue tea or butterfly pea tea, is an infusion made from the Clitoria ternatea plant and is found mostly in Southeast Asian countries such as Thailand, Malaysia and Vietnam where it has been used for centuries in cooking and as a beverage, often mixed with honey and lemon. Scientific studies have shown that amongst other components, Butterfly Pea tea is rich in EGCG catechins, flavonoids, tannins, polyphenols and anthocyanin and that it can help boost the immune system, aid digestion, increase productivity as well as being a mood enhancer. It can also improve skin appearance, hair strength and promote quality sleep. Butterfly Pea tea is made from the dried flowers whose petals contain a pigment that give the infusion its blue colour. Naturally caffeine-free, its woody, earthy taste can be enjoyed hot as well as iced. It is also very popular as an ingredient in cocktails as its colour changes according to the PH of added ingredients. For example, add a few drops of lemon juice to your Blue Tea and watch it change colour from blue to purple to fuchsia.
